When Evidence Conflicts With Our Interpretation!!!

Many years ago, the Church believed that the sun revolved around the earth (this is called a geocentric model). They knew this was the case because the bible referred to the earth has having 'foundations'. Eventually, a Christian named Copernicus figured out that it worked the other way around. He discovered that the earth revolves around the sun (this is called a heliocentric model).
Obviously, the church was none too happy that Copernicus was teaching something that was in opposition to their INTERPRETATION of the bible. What should WE do when we discover evidence that conflicts with our own interpretation of the bible?
Should we insist that our own interpretation is right because we are determined to stick to a 'literal' interpretation or should we try to evaluate how our own interpretation might be wrong?
